The idea is to capture the interesting bits throughout your day, returning briefly whenever there is a break. The idea here isn't to "sit down and journal" but instead to quickly capture an activity, feeling, or experience at the next opportune moment.
Interstitual journals are usually organized by one note for each day, and are sometimes called "Daily Notes." Entries within each note are often organized by time or simply bullet points.
